The trout (Salmo trutta) belongs to the salmon family (Salmonidae) and occurs in the three subspecies salmon, rainbow and brown trout both in the sea as a saltwater fish and in lakes, streams and rivers as a freshwater fish. Trout tend to prefer cold waters and are very common in the Atlantic, the North Sea and the Baltic Sea, but all over the world.
All trout initially grow up in inland waters. However, while some (stationary) species stay there all their lives, other (migratory) species migrate to the sea after about one to five years, where they live for another 6 months to five years near the coast, before finally moving upstream in the spawning season between July and November swim and spawn there. After spawning, most of the trout return to the sea.
Trout can reach a length of between 20 and 70 cm, weigh up to 7 kg and have an average life expectancy of 4 to 6 years. In Germany, trout accounts for by far the largest share of inland fisheries with an annual production of almost 25,000 tons. In addition to iodine and omega-3 fatty acids, trout also contain plenty of vitamins , including almost all B vitamins and vitamins A, C, D and E. Also minerals and trace elements such as potassium , magnesium , zinc , sodium , iron , fluorine and copper are contained in trout. A total of 100 grams of trout with a nutritional value of just under 120 calories consists of around three quarters water and almost one fifth protein. Most of the rest is made up of unsaturated fatty acids.

It is also advisable to temporarily store the trout in a cool box or similar immediately after purchase and to cool it directly at home. Trout that are frozen in the freezer without interrupting the cold chain have a significantly longer shelf life. They stay there for several months.
When buying a trout, the basic rule is: the earlier in the processing chain the fish is bought, the better. Because on its way from the fisherman’s net to the wholesaler to the supermarket, it loses more and more of its freshness.
