Seelachs
Saithe is a popular type of fish that belongs to the cod family . However, it is not related to the salmon .
Here’s what you should know about Pollock
The coalfish is actually known as coalfish (Pollachius virens). Sometimes it is also referred to as cabbage fish. It is part of the cod family (Gadidae). The misleading name pollock came from the fish industry, which wanted to sell the fish species better in this way. From a zoological perspective, however, there is no relationship whatsoever between coalfish and salmon, which are classified as salmonids (salmon fish).
The Pollock has an elongated body with dorsal and anal fins close together. The lateral line running parallel to the back can be seen as a light stripe. The coalfish is colored black, black-brown or green on the back. In the direction of the flanks, the color changes to dark silver. The belly, on the other hand, has a silvery-white colour. The chin thread, which is otherwise a typical feature of cod, is small or even non-existent.
The size of an adult Pollock can reach up to 1.2 meters. The maximum weight is around 7 kilograms. The charcoal burner is native to the northern North Sea, the Kattegat and the Skagerrak. In addition, the fish cavort in Spitsbergen, Iceland, England, in the Baltic Sea and in Portuguese waters. The coalfish live in both offshore and near-shore waters.
While younger cabbage fish feed on fish spawn and crustaceans, older specimens feed on small schooling fish.
By renaming charcoal in pollock, the fish industry was able to significantly improve the consumption of pollock from the 1930s onwards. The demand increased more and more, which led to the overfishing of coalfish up until the 1990s.
importance to health
In Germany, pollock is one of the ten most popular edible fish. It is offered as fresh fish, dried fish or salt fish. The range also includes frozen pollock fillets. These are portioned based on the size of the charcoal burner. The fish is also available as a substitute for salmon.
In principle, pollock can be purchased all year round. However, it has its best time in the months of October to February. In terms of aroma, pollock is spicy and strong. However, it does not have an overpowering fishy taste.
Saithe is considered a healthy meal. So its fat content is quite low. It also contains healthy omega-3 fatty acids, albeit in relatively small amounts. Furthermore, pollock is classified as a cheap source of protein.

Even small amounts of pollock trigger allergic reactions in sensitive people. These primarily include oral allergy syndrome, gastrointestinal problems and skin rash . Sometimes asthmatic attacks are also possible.
Shopping and kitchen tips
When purchasing pollock, you should pay attention to its origin. The WWF advises giving preference to pollack that comes from the northern Arctic. On the other hand, cabbage fish from the North Atlantic are not recommended. It is important that the pollock does not smell like fish, but rather like a fresh sea breeze. His eyes should be clear and shiny and his skin should be tight. The same applies to meat and scales.
In most cases the coalfish is offered in sections. Frozen specimens are considered to be very inexpensive and are also available from discounters.
When purchasing fresh pollock, it can be stored in the refrigerator for about a day or two if covered with foil. In contrast, deep-frozen coalfish can be kept for several months.
preparation tips
Fish fingers are probably one of the most popular pollock menus. This involves filleting the fish meat, which is then chopped up and shaped accordingly. Saithe is also often used in fresh meatballs. Even as a whole piece, Köhler is usually eaten breaded.
But it can also be enjoyed without breading. Saithe is prepared by roasting, baking, frying or steaming. It can also be prepared as a casserole. The charcoal burner is also suitable for grilled skewers or ragouts. In addition, pollock forms the basis for salmon substitutes.
