The sea bream or sea bream is an edible fish that can be found in the Mediterranean. The flesh of the sea bream is very tasty and firm, and it also contains numerous minerals and proteins .

A member of the perch family, the sea bream (or royal bream) features gold-colored spots on its cheeks and a gold band found on its forehead. For this reason it is often also called sea bream. Dorades reach a length of up to 70cm and a weight of around 2.5kg. They have very powerful incisors and molars and feed mainly on mussels, fish and crustaceans.

The body of the sea bream is oval in shape and has a high back. The back is dark gray and turns silvery white towards the belly. The mouth of the fish is inferior, and the thick lips are particularly striking. Most sea bream are male and convert to female fish after about three years. Dorades prefer shallow waters and usually live at a depth of about 30 meters. In spring they can also be found in brackish water zones.

In ancient Greece, the edible fish was dedicated to the goddess Aphrodite. Sea bream have a very pleasant taste and extremely lean and tender meat. The main fishing areas can be found in Turkey, Spain, Israel, Greece and Italy, but today sea bream are also bred very frequently. The Mediterranean coasts are particularly suitable as breeding areas, with Spain, Israel, Turkey and Greece being very important breeding areas.

In the Mediterranean area, sea bream are economically important because they fetch good prices. The success increased above all with the aquacultures, in which about 10,000 tons are produced per year, whereas the wild catches amount to only about 3000 tons.

Sea bream have the best taste from July to October, but they are available all year round as they mostly come from farms. The fish should be consumed relatively quickly and well chilled. The sea bream will keep in the fridge for about a day or two. If sea bream are bought ready to cook, no gutting or scaling is required.

Preparation tips

To prepare a sea bream, fresh herb sprigs or a little lemon are placed in the abdominal cavity. This gives the fish a good flavor and keeps it in shape. The skin of the fish should be lightly scored to prevent it from tearing on the grill or during cooking. Sea bream are often cooked whole and can then be filleted before serving.

The fish is prepared on the grill or in the oven and is best served with Mediterranean vegetables, salad, baguette or rosemary potatoes .

If the fishmonger has not yet scaled the sea bream, the fins can be removed from the fish using poultry shears. However, the caudal fin is not removed. The scales are then scraped off in the opposite direction of growth. A fish scaler or the back of a knife can be used for this. It should be noted that forgotten scales burn during frying and this reduces the taste.

A sharp knife is required for filleting, with which the sea bream is cut behind the gills or the head up to the middle bone. Then the knife is moved towards the tail fin. Once the fish has been deheaded, it is cut in half and the bones removed, bream having almost no bones.
