Cucumbers
The cucumber , which belongs to the pumpkin family, is often used in salads, soups or other dishes. There are many different varieties, for example the peeling, salad, pickling, pickled, pickled and mustard gherkins. The male flowers of the cucumber sit on thin stalks. The fertilized flowers mature into cucumbers within about two weeks. The longer they hang, the bigger and thicker they get.
Cucumbers will later turn yellow, but they should be eaten when they are actually ripe, when they are green. Cucumbers are more than 95 percent water and the energy value is only about 10 kcal per 100 grams, making them a very low-calorie vegetable.

Storage in the refrigerator is not well suited because the cucumbers only last three to four days at most. If the temperatures are too low, cold damage occurs, which manifests itself as mushy. Under ideal storage conditions, the cucumbers can be kept for two to three weeks. When purchasing, care should be taken to ensure an undamaged and taut shell that is rich in colour.
Cucumbers that can be bent are no longer as fresh. A cucumber that looks glassy has gotten too much cold. Due to the high water content, the vegetables are not suitable for freezing. Cucumbers should be washed thoroughly with warm water, but not peeled, since the peel contains the nutrients. Since salt removes these and also the liquid, it is advisable to use the spice last when preparing a salad.
