The term “Brottrunk” is meant literally: A special bread made from organically grown grain ( wheat , rye , oats ), spring water, rock salt and natural sourdough is baked to make it. This bread is crushed and soaked in spring water in special fermentation kettles. Both together are left to ferment for about six months. This fermentation process produces neither alcohol nor carbonic acid.

Once the fermentation time is over, the liquid is filtered out of the mixture. Said liquid is already the finished bread drink, which is then bottled untreated. The taste of the drink is sour and strongly reminiscent of grain.

The origin of the bread drink lies in the experiments of the master baker Wilhelm Kanne, who observed during experiments with fermenting bread that the clay jug used seemed to eliminate all its impurities. So he came up with the idea that the human body could also cleanse itself by consuming such a lactic acid product.
